Ingredients

  • 4 Mission Yellow Corn Tortillas Extra Thin

  • 245  grams egg whites

  • 30 grams onion diced

  • 100 grams bell pepper chopped or diced

  • 65 grams diced tomato

  • 7 grams McCormick Bacon Bits

  • 28 grams Finely Shredded Low Moisture Part  Skim Mozzarella 

  • 30 grams Daisy Brand Sour Cream Light 

Preparation

Eggs: Spray skillet with coconut or avocado oil and scramble the  egg whites on low to medium heat

Cut tortillas into small triangles that look like chips 

Place chips into air fryer at 380 for 5 minutes - CHECK THEM ALONG THE WAY. Everyone likes a different level of crisp - I personally like extra crispy (You can lightly spray them if you want - I do and season them with pink salt) If you do not have an air fryer, you can place on cookie sheet in the oven

Cut up veggies and set aside in a bowl

Plate  the chips and place scrambled egg whites over the chips. Place veggies all over the eggs. Top with cheese and place in microwave for 30 seconds or so. 

Top with bacon bits, sour cream and hot sauce if you like! Enjoy
