Protein Blueberry Lemon Loaf

Protein Blueberry Lemon Loaf


  • 250 grams all purpose flour

  • 230 grams nonfat vanilla greek yogurt

  • 150 grams blueberries (we used fresh)

  • 60 grams nonfat plain greek yogurt

  • 30 ml fresh squeezed lemon juice

  • 12 grams baking soda

  • 6 grams vanilla extract

  • 3 grams salt

  • 2 large whole eggs

  • zest of 1 lemon


Preheat oven to 350 deg F

Spray a 9x5 loaf pan with non stick spray or cover in parchment paper

In a large mixing bowl, whisk together the flour, baking powder, and salt

In another mixing bowl, mix together the greek yogurts, lemon juice, lemon zest, eggs and vanilla. Mix well!

Combine the dry and wet ingredients until fully mixed

Pour the batter into the pan and spread it around to become as even as possible! Bake for approximately 45 min or until a wooden toothpick inserted comes out clean (you can also tent foil over the pan the last 10 min or so if you don’t want so much browning on top of your loaf!)

Remove from oven and let it cool for about 20 minutes in the loaf pan. Carefully remove from the loaf pan and transfer to a wire rack to cool for another 10-20 min. Best to cut when completely cool however no one is going to stop you if you just can’t wait to taste! Enjoy!


Place loaf in an airtight container or plastic bag at room temperature or in the refrigerator for 3-4 days.
